Home Fries with Sausage, Peppers, Kale, & Chipotle Cream

A delicious Home Fries recipe with Sausage, Peppers, Kale, and Chipotle Cream.  It's perfect for breakfast, brunch, and even dinner!

  • 5 medium sized red potatoes cut into ½ inch cubes
  • 2 tablespoons olive oil divided
  • 3 tablespoons fajita or taco seasoning divided
  • 1 green bell pepper cut into cubes
  • 1 red bell pepper cut into cubes
  • 1 orange bell pepper cut into cubes
  • 1 ½ cups vegan sausage cut into chunks
  • 5 dinosaur kale leaves roughly chopped
  • Any toppings you want I top mine with avocado and sauerkraut


  • 1 heaping cup zucchini, peeled and roughly chopped
  • 1 cup raw unsalted cashews
  • 3 garlic cloves
  • 1 teaspoon ground cumin
  • juice of 1 lemon
  • 2 tablespoons chipotle in adobo sauce more or less depending on your liking
  • ¾ cups water filtered if possible
  • ½ cup fresh cilantro roughly chopped
  • salt to taste


  1. Preheat the oven to 425F.
  2. Place the potatoes on a baking sheet and drizzle with 1 – 2 tablespoons olive oil and 2 tablespoons of fajita or taco seasoning. Mix everything well and bake for about 35 – 40 minutes, or until the potatoes are fork tender.
  3. While the potatoes are cooking, make the chipotle cream by placing everything but the cilantro in a blender and blending until smooth. Once smooth, add the cilantro and blitz it for 1 – 2 seconds, so little specs of green cilantro show throughout the sauce. Pour into a container and set aside.
  4. Next, place a large pan or large pot on medium heat. Once hot, add 1 tablespoon of olive oil, all of the bell peppers, and 1 tablespoon of fajita or taco seasoning. Stir well and cook for about 5 minutes, or until the peppers have softened slightly, but are not overcooked. You can cover the pot or pan with a lid to help the peppers cook faster, but be sure to watch them so they don’t burn.
  5. Next, add the sausage and kale. Stir and cook for about 3 minutes, or until the kale has wilted. Turn off the heat and set aside if your potatoes are still cooking.
  6. Once the potatoes are done, add them to the pot or pan with the bell peppers, kale, etc… Stir everything well. Turn on the heat to medium if you need to warm everything up.
  7. To serve, place the home fries on a plate, drizzle the chipotle cream on top, and add any toppings, if using.

A quicker version of the Chipotle Cream is to use vegan mayonnaise and just blend it with the lemon juice, cumin, chipotle in adobo sauce, garlic, salt, and add the cilantro at the end.
