Strawberry, Beet, Ginger Smoothie

A healthy and delicious smoothie filled with strawberries, beets, and ginger!

Ingredients

  • 2 cups frozen strawberries
  • 2 tsp fresh ginger
  • 2.5 cups cherry juice
  • 1/4 inch lemon slice
  • 1 cup spinach, optional
  • 1/2 cup fresh beets, peeled and roughly chopped

Instructions

  1. Blend everything together until smooth. Add water to adjust the sweetness and consistency, if desired.

Recipe Notes

Lemon peel and pith have many health benefits so I like to blend whole slices of lemons in my smoothies. If your blender is not strong enough to blend lemon with the peel attached to it then I would use the juice of 1 or 2 lemons (taste to see how many you want to use).

 

The color will not be as vibrant if you add spinach. I like to add spinach for nutritional reasons, even though it messes up the color.
