Jerk Spiced Roasted Bella Mushrooms

Ingredients

  • 1 heaping teaspoon fresh ginger
  • ½ cup green onion
  • 2 tablespoons fresh thyme
  • 4 garlic cloves
  • 1/8 teaspoon scotch bonnet pepper
  • 2 teaspoon soy sauce or coconut aminos
  • ¼ cup olive oil
  • 1 tablespoons agave nectar
  • juice of 1 lemon
  • salt to taste
  • 16 ounces baby portobellos or button mushrooms cut in quarters

Instructions

  1. Preheat your oven to 350 F.
  2. To make the jerk marinade, place all of the ingredients EXCEPT THE MUSHROOMS in a blender or food processor and blend until smooth.
  3. Place the mushrooms in a large bowl and add the marinade. Cover and marinate for at least 30 minutes, up to 2 hours.
  4. Cover a baking sheet with aluminum foil or parchment paper (this marinade might discolor your baking sheet). Add all of the mushrooms and marinade to the baking sheet. Make sure everything is spread evenly on the sheet. Place in the oven and bake for 30 minutes, or until the mushrooms are tender but not mushy. They should still have a little firmness to them.

  5. Serve with a salad or rice, or both!
