No Processed Sugar?!
That’s right! These milk recipes use NO processed sugar. I use medjool dates to sweeten the chocolate, strawberry, and vanilla cinnamon milks. I use agave nectar in many recipes, but I love using dates as a sweetener whenever possible because it is a whole food with fiber, unlike white sugar, stevia, agave nectar, coconut sugar, honey, etc…
From what I’ve learned, the soluble fiber in sweet foods like dates and other fruits slow down the rate at which the sugar enters our blood stream. This helps us avoid those crazy sugar spikes! Of course, I always advise to do your own health research.
Lactose Free?
Yes, you can consume any of these milks even if you are lactose intolerant. These milk recipes contain no lactose!
Do I Have to Use Cashews?
I only use cashews to make vegan milk. In my opinion, cashews create a bland milk with no aftertaste, unlike almond milk, oat milk, pumpkin seed milk, and other nut or seed milks. I prefer to have a clean “blank slate” when making vegan milk so the flavor of the milk does not overpower the seasonings of whatever I’m putting in the milk.
You can use almonds, hemp seeds, oats, pumpkin seeds, or whatever else you prefer, but I’ve only tried these recipes with cashews. I cannot tell you how the milks will turn out if you use a different ingredient.
Cacao Powder vs Cocoa Powder
I use cacao powder to make the chocolate milk, but you can use cocoa powder if that’s all you can find or if that is what you prefer.
The difference between the two is that cacao powder is made by cold-pressing un-roasted cacao beans, keeping the living enzymes in the cacao. Cocoa powder is raw cacao that has been roasted at high temperatures.
Health Benefits
Cashew nuts represent a good source of unsaturated FA, fiber, sterols, vitamins, and amino acids, suggesting that their intake contribute to the widely known beneficial roles in health of these nutrients.
Research shows that including nuts in a healthy dietary pattern will extend the cardioprotective effects beyond those attributable to the components of any healthy diet exclusive of nuts.
Cashews have shown to contain antioxidant and antimicrobial effects. Parts of the cashew tree can be used to treat infectious diseases caused by bacteria and fungi and to fight free radicals

Recipe Notes
These milks will separate after they’ve sat for a while, so shake the milk before drinking it or using it in a recipe. These will last about 7 days in the refrigerator.

Medjool dates are the best! I was a pastry chef for 15 years and I always used them as sweeteners for people that wanted something a little healthier.

I’m a huge fan of cashew milk. I feel like it makes my smoothies taste so much creamier and richer. I also use it when I make hot chocolate or chai lattes.
I love putting it in smoothies too!
