A healthy alternative to Jamaican Jerk Chicken!  If you love Jamaican food then definitely make this recipe!  This Jerk Spiced Eggplant uses meaty eggplant, a flavorful jerk marinade, and delicious curry seasoning to make this the ultimate vegan jerk recipe!

What Is Used In Jamaican Jerk Marinade?

Jerk marinade recipes vary depending on whichever secret family recipe is being followed!  I am lucky enough to have parents who have Jamaican neighbors.  Their neighbor knows I’m a chef so she would always invite me over to learn Jamaican recipes from her, which was AWESOME!  I loooove learning authentic recipes straight from the source!

After learning from her and seeing how other Jamaicans make their jerk marinade, I learned that there are a few ingredients everyone uses:

 

 

scotch bonnet peppers

fresh thyme

fresh garlic

green onion

fresh ginger

soy sauce

 

 

That’s right people.  Soy Sauce.  I have seen seeeeveral Jamaicans use this ingredient in their cooking and was very surprised at first, but when I think about it there are tons of Chinese-Jamaicans so it makes since!

I use coconut aminos instead of soy sauce, since I am soy sensitive, and it tastes great.

Another Way To Use This Recipe

One of the many things I love about this recipe is that it can easily be transformed from a lunch wrap to a dinner entree.

If you want to eat Jerk Eggplant for dinner (or jerk anything for that matter because you can use any vegetable in this recipe), just cut your eggplant lengthwise into a few slices.  Rub the marinade over the slices, drizzle with a little olive oil, and bake, pan sear, or grill!  Easy Peasy!

 

 

 

Suggested Sides

If you choose to cook the eggplant as an entree I suggest eating it with:

Rice (coconut rice, rice and peas, or plain white/brown rice)

and

Simple Salad or Sautéed Greens like Kale or Spinach

A delicious and healthy Jamaican Jerk Spiced Wrap with a tangy Curry Remoulade!

Ingredients
EGGPLANT
  • 1 large eggplant diced
  • 2.5 tablespoons jerk marinade/sauce any kind
  • 1 - 2 tablespoons olive oil
REMOULADE
  • 1 onion diced small
  • 2 tablespoons green onions
  • 1 1/2 cups vegan mayonnaise
  • 2 teaspoons jamaican curry powder
  • 1 tablespoon dijon mustard
  • juice of 2 lemons
  • 1 tablespoon capers
  • 5 dashes hot sauce
  • salt and pepper to taste
TOPPINGS
  • 2 cups romaine lettuce
  • 1 tomato chopped
  • 2 - 3 tortillas
Instructions
  1. Preheat the oven to 375 F. Toss the eggplant with the jerk marinade or seasoning and olive oil.

  2. Spread onto a baking sheet and bake for 20 – 25 minutes, or until the eggplant is tender.
  3. To make the remoulade, mix the remoulade ingredients together in a bowl.

  4. To assemble, spread some remoulade on your tortilla and add your desired amount of eggplant, tomato, and lettuce. Roll, enjoy.
