This Fruit with Sweet Lemon Cream is a great beginners dessert recipe.  It is vegan, gluten free, and the perfect remedy for this hot weather!

This summer is no joke.  No.  JOKE.

It’s hooooot in Atlanta right now!  It upsets me greatly when I look at my weather app and see that Atlanta is hotter than Miami!  I used to live in Miami and don’t think that’s normal.

Why?  Just, why?!  ????

Anyways, I’ve never been a huge fruit eater.  I usually consume my fruit by blending it in my green smoothie, but these days I’ve been munching on mangoes, lychee, pomegranate, and just regular bowls of cold, refreshing, fruit.

 

Fruit with Sweet Lemon Cream

This is a super easy dessert.  The lemon cream is not very sweet.  It’s citrusy with just a hint of sweetness and the creamy texture goes great with the fruit.  You could also add some pistachios, almonds, pepitas, or any other nut/seed on top for a little crunch.

 

What Fruit Can I Use?

Whatever your heart desires!  The options really are endless!  I have made this recipe with pomegranates, black berries, peaches, chopped mango, and a ton of other fruit.

Fruit with Sweet Lemon Frosting

Fruit with Sweet Lemon Cream

Easiest and most refreshing summer dessert recipe!

Ingredients

  • 1 cup cashews
  • ½ cup water filtered if possible
  • 5 – 6 pitted medjool dates or 1 tablespoon agave nectar
  • ¼ inch slice of lemon or the juice of 1 – 2 lemons
  • assortment of fresh fruit any type you like

Instructions

  1. Blend the cashews, water, dates, and lemon until completely smooth.
  2. Place your fruit in your bowl and top with some of the Sweet Lemon Cream.

Recipe Notes

This lemon cream is also great to use as frosting.

    I am not the best in the kitchen but I try to experiment whenever I need to slave in the kitchen! This dessert is absolutely delicious, I may have to try it at home one day! I think my little one would love this too! She can eat anything fruit, it’s amazing!
