  • Eggplant with Sundried Tomato & Mushroom Stuffing⁣ -⁣ To make the stuffing I scooped out the eggplant flesh and sautéed it with olive oil, garlic, king trumpet mushrooms, sundried tomatoes, balsamic vinegar, and added jasmine rice to make it hearty. I finish it with fresh herbs, stuff it into the eggplant, and roast it until tender.⁣ -⁣ It’s DELICIOUS and I make it for my personal chef clients all of the time!! Vegan | Gluten free⁣ -⁣ I used cashew milk for this recipe & these vanilla cream pies taste just as good (even better in my opinion 🙂) as desserts that are made with regular milk or cream! The texture is soft and creamy and the crust gives it just enough crunch and texture.⁣ -⁣ I loved using pecans in this recipe but I want to try another recipe using pistachios.   • Chocolate Sunflower Butter Cups.⁣ -⁣ This is one of the easiest desserts to make, but it's SO versatile. You can stuff the cups with just about anything you'd like. i used bananas as one stuffing, sunflower butter as another, and homemade date paste as the third.
